What Changes at Industrial Scale
At industrial volumes, freeze drying stops being a simple industrial freeze drying equipment purchase and becomes a plant design problem. The water load per cycle gets large enough that condenser capacity, refrigeration plant, vacuum systems, and material handling have to be engineered together with your building and utilities.
Consider the arithmetic: a 4,000 lb batch entering at 75% moisture and finishing at 3% has to give up roughly 2,969 lb of water in a single cycle (4,000 lb × 25% = 1,000 lb of solids; 1,000 ÷ 0.97 ≈ 1,031 lb finished weight; 4,000 − 1,031 ≈ 2,969 lb of water). The condenser has to capture all of it, the refrigeration system has to carry that load hour after hour, and the vacuum system has to hold conditions the entire time. That is why industrial systems are engineered, not picked from a chart.
