Freeze drying removes water by sublimation at low temperature rather than cooking it out — which is why it suits botanicals, mushroom products, juices and extracts, probiotics-adjacent formulations, and other sensitive materials.

But gentle does not have to mean slow or expensive. The Water-Load Math, With an Extract Example

Liquids and extracts carry the most water per pound of any product class. Take a hypothetical 200 lb tray-loaded batch of liquid extract at 90% moisture with a 3% final-moisture target:

  • Solids: 200 lb × (1 − 0.90) = 20 lb
  • Finished weight: 20 ÷ (1 − 0.03) ≈ 20.6 lb
  • Water to remove: 200 − 20.6 ≈ 179.4 lb per batch
